Saint Andre is a high milk-fat French cheese in a powdery white, bloomy skin of mold. It has a soft buttery texture, tangy-edible rind, and tastes like an intense version of Brie. A wheel of Saint Andre is smaller and higher than a normal flat wheel of Brie. Because of the high fat content of this cheese, it pairs very nicely with a light beer, a baguette, and a slice of pear!
